Zaffron was named after the spice saffron. Blooming only three weeks out of the year, it is quickly harvested by hand. Each flower will yield only three female threads (stigmas). This is saffron with it's unique flavor and beautiful color, one of the rarest and perhaps most expensive spices' However, at Zaffron we use generous portions in most of our dishes.
