Indian Chinese Chilli Chicken Recipe

Mulligatawny is an Anglo-Indian dish very much like a soup. A literal translation from Tamil is "pepper water" ('Millagu' is pepper and 'Thanni' is water). Despite the name, pepper itself is not a vital ingredient. Rice and noodles are commonly served in the soup ; the real dish the Anglo-Indians call "pepper water" is closer to Tamilian rasam (pronounced Russ-um) than mulligatawny.

Variations differ very much; Sometimes, the soup takes on a turmeric-like yellow color and is garnished with parsley and chicken meat, and is more soup-like, which takes on its Anglo-Indian adaptation to be a thick, spicy meat soup. This version has remained popular and is now available in cans in some stores.

Butter chicken , also known as Murg Makhani, is a very rich and popular dish with everyone and every age group! My sons know this as ‘chicken with the red curry’ and enjoy it to the hilt. Considering how often we make it at our home, we have to make it a little more healthy without compromising on the taste. Butter chicken is one of those dishes that very few restaurants get wrong…every cook or chef has his or her own little variations which makes their dish unique and yet, fantastic. Murg Makhani is a dish that has wonderful flavor and a rich and creamy texture.

Tandoori chicken is a chicken dish that originated in India. The chicken is marinated in a yogurt seasoned with either prepared tandoori masala.  It is traditionally cooked at high temperatures in an earthen oven (i.e. tandoor), but can also be prepared on a traditional grill.

Sanjeev Kapoor's Khana Khazana

Sanjeev Kapoor is one of India's most popular chefs and author. This book is the first in the series called "Khana Khazana: Celebration of Indian Cookery" which has been planned in order to familiarize food lovers with long forgotten regional cuisines of India. These recipes will open the doors to the unexplored range of recipes that had been relegated to the archives. A lot of painstaking research has gone into collecting these recipes.

Each state and region included in this book has its own cuisine and local flavour. In this book the author introduces a variety of dishes that have been perfected by our ancestors. At the same time care has been taken to ensure that the ingredients used are easily available and if not, a substitute has been suggested. Chettinad Fried Chicken, Kombdi Wada, Chingri Malai Curry, Rayalseema Pesarettu, Kolhapuri Pandhra Rassa, Kesari Rajbhog, Khajoori Shahi Tukra are just a glimpse of the fabulous tongue tickling recipes you will find between the two covers of this book. They will not only bring in India's diversity into your home kitchens but also help you to satiate the best of gourmet palates.
