Rice Kheer

Description This is the basic recipe for a rice kheer. You can make various alternate versions using this basic recipe.

3 - 4 cups of whole milk, diluted with 1 - 2 cups of water
1 cup rice (basmati rice is best)
1 cup condensed milk
1/2 cup sugar
1 tablespoon raisins
1 tablespoon of dry roasted pistachios nut pieces. (Roasted cashews or almonds are also fine)
1 teaspoon finely powdered elaichi (cardamom) seeds
Methods/steps
  1.  Boil the rice in the milk on a medium flame until the rice is cooked.
  2. Keep stirring frequently otherwise your milk may burn at the bottom of the vessel. 
  3.  Add the condensed milk, sugar, raisins, and nuts. Stir till the sugar dissolves and the mixture thickens. 
  4.  Add the cardamom and serve hot.
Additional Tips

 - Make sure the pistachios are roasted

- The thickness of the kheer can be adjusted with the quantity of water

- Can be served hot or cold. I personally like it cold.
