Toor Daal with Vegetables

Ingredients

Toor dal 250 gms
Veggies such as cauliflower, radish, flat beans, drumsticks, marrow, parwal, potatoes cut in 1 inch cubes or lengthwise-2 cups
a small bunch coriander leaves
6-8 cups of water
Turmeric paste 1 tsp
Chilli paste 1/4 tsp
Cummin paste 2 tab
Coriander paste 1 tab
Ginger paste 1 tab
Slit green chillies 6-8
Sugar 1/2 tab
Ghee 1 tab
Panch phoron 1/2 tab ( a type of masala powder )
Salt to taste

 

Methods/steps

  1. Wash the dal and add it to the boiling water in the pan.
  2. When the dal comes to boil and add veggies such as potatoes and radish which take longer to cook. Add the turmeric and chilli paste.
  3. Mix well and simmer over medium heat. Add veggies to dal according to their cooking time.
  4. Finally add the coriander, cumin and ginger pastes, slit green chillies and salt and sugar.
  5. Mix thoroughly and simmer for another 10 mins or till dal and veggies are cooked.
  6. In a pan heat ghee and add panch phoron. When this stops spluttering pour in the dal and stir and bring to boil and remove from the fire.
